One of the highlights of our summer in Northeastern Pennsylvania is the Annual Novena to St. Ann.  St. Ann’s has been a large part of our local history, and this month the parish is celebrating 100 years of the novena.  

Many of us have memories of our mothers taking us for the nine-day event, sitting on the grass in sweltering heat and standing in long lines for the final blessing. 

On a personal note, my parents, the late Frank and Minerva Sempa,  actually had their first date at the Novena.  Following their marriage, they attended the Monday Novena to pray for a family, thus, my middle name is Ann. 

St. Ann didn’t quit then. Many years later when I was dating my husband, he suggested we go to the Novena. Of course, I was pleasantly impressed.  

Later that evening I wound up taking him to the emergency room, where he was diagnosed with a blocked coronary artery. St. Ann, in my opinion, doesn’t quit!

The St. Ann’s 100th Anniversary Cookbook is shown in front of my statue of St. Ann, which was a gift from my Baba, on my birth 72 years ago.

So recently when I learned it was the 100th Anniversary of the Novena and the committee had published a 100th Anniversary St. Ann’s Solemn Novena Cookbook with 350 recipes, I knew I had to feature it for this momentous event.

Here are a few of the recipes I’ve marked to try at home:

Roasted Red Pepper Dip
Lori Summa

2-8 oz. pkgs. cream cheese, softened
2 ( 12-15 oz.) jars roasted red peppers, drained
2 pkgs. dry Ranch dip mix

Mix all ingredients in food processor.  Great for pita chips or veggies.  Also, tri-color cheese tortellini that have been boiled and drained.  Can be made ahead and kept in refrigerator.

White Pasta Fagioli

¼ c. good quality olive oil
1 medium onion, diced
4 cloves minced garlic
1 lb. acini de pepe pasta
4 c. cannellini beans, drained and rinsed
1 c. plum tomatoes, well drained, diced or torn
1 Tbsp. Italian seasoning
10 c. chicken stock
Salt and pepper to taste
4 Tbsp. butter, softened and then combined with 4 Tbsp. all-purpose flouur
Grated Pecorino Romano cheese
Additional olive oil for drizzle

In a heavy bottomed saucepan, saute’ onions in olive oil.  Add garlic and saute’ lightly.  Add pasta and toast briefly.  Add Italian seasoning and stock. Bring mixture to a boil, then lower heat and simmer for about 20 minutes.  Add beans; return to boil. Add tomatoes.  Season with salt and pepper.  Return to simmer for about 10 minutes.  Add the flour and butter mixture and continue to simmer until the soup has thickened. Serve with grated Pecorino cheese and a drizzle of extra virgin olive oil.  Serves 8-10.

Mary Smirne’s Cavatelli & Broccoli

1 lb. frozen cavatelli (you also can make your own)
1 large head broccoli, cut into florets
4 cloves garlic, crushed
Handful grated cheese or to taste (Mrs. Smirne uses Locatelli Pecorino Romano)
1 can chicken broth
¼ cup olive oil

In a pan, saute’ garlic in oil until done, but not brown.  Add broccoli and heat until the broccoli soaks up the oil.  Add chicken broth and simmer. Cook pasta according to directions.  Drain pasta and add grated cheese.  Mix all ingredients. Serve.

Uncle Joe’s Best Baked Beans

½ lb. ground beef
10 slices bacon, chopped
½ cup chopped onion
1/3 cup brown sugar
1/3 cup white sugar
¼ cup ketchup
¼ cup barbecue sauce
2 Tbsp. mustard
2 Tbsp. molasses
½ tsp. salt
½ tsp. chili powder
½ tsp. pepper
1 lb. kidney beans, drained
1 lb. butter beans, drained
1 lb. pork and beans

Brown ground beef and bacon. Drain.  Add onion and cook until tender.  Add all other ingredients except baked beans.  Drain kidney and butter beans.  Add all beans to mixture.  Pour into crockpot or 3-quart casserole dish.  To prepare crockpot: Cook on High for 1 hour.  Reduce heat to Low and cook for 4 more hours. 

Almost Candy Bars

1 chocolate devil’s food cake mix
1 stick margarine or butter
6 oz. chocolate chips
6 oz. butterscotch chips
1 cup chopped nuts
1 cup flaked coconut
1 can Eagle Brand sweetened condensed milk

On a 15x10x1″ baking sheet, place cake mix and margarine or butter.  Layer with chocolate chips, butterscotch chips, chopped nuts and coconut.  Top with sweetened condensed milk.  Bake at 350 degrees for 20-30 minutes.

Marie’s Strawberry Punch

1 liter ginger ale
1 bottle Asti Spumante
1 quart softened raspberry sherbet
1 pint vanilla ice cream
Whole strawberries, cleaned

Mix together ginger ale, asti spumante, sherbet and vanilla ice cream.  Add strawberries last.

Kids enjoying summer programs at Perry’s Academy of Learning

Students from Perry’s Academy of Learning Center celebrated “It’s a Bugs Life” week and “Summer Solstice” week to start off summer programming. The students will continue to enjoy and learn with fun, educational theme weeks all summer.

Summer programs

United Neighborhood Centers of Northeastern Pennsylvania (UNC) Pine Brook Revitalization Neighborhood Revitalization Plan has scheduled free summer programming for the community. The programs include a yoga class, a walking club, and a book club for children.

Yoga will be held every Monday during July and August at the Capouse Corner Green Space, 1371 Capouse Street at New York Avenue. The free class for all levels of ability is at 5:30 p.m. The dates are July 8, 15, 22, and 29, and August 5, 12, 19, and 26.

Get your steps with Walking Club every Tuesday during July and August. The free group will meet at John Adams Elementary School at 5:30 pm. Walks will be approximately 30 to 45 minutes at all paces. The dates are July 9, 16, 23, and 30, and August 6, 13, 20, and 27.

Feed your mind at Reading in the Park, a children’s book club, every Wednesday during July and August at 11 am. Children will be provided with a book and snack. The dates are July 10, 17, 24, and 31, and August 7, 14, 21, and 28.

Home Fair

NeighborWorks Northeastern Pennsylvania (NeighborWorks) will host its inaugural Home Fair on July 13 from 11 a.m. to 2 p.m. on Courthouse Square in downtown Scranton. This community-centered event aims to provide valuable information on housing health and safety, homeownership and affordability resources to residents of Lackawanna County.

The Home Fair will feature a diverse array of community resources. Attendees will have access to several homeownership resources, from lenders and realtors to home inspectors and insurance providers. This event is designed for all residents of Lackawanna County. Attendees will find valuable information, whether they are renters, prospective homebuyers, current homeowners, or those interested in learning more about home health and safety.

YMCA 5K Run & 1 Mile Walk

Join the Greater Scranton YMCA on Saturday, September 28, for a family friendly 5K Run & 1 Mile Walk. Event proceeds will support the Y’s Annual Support Campaign, which provides scholarship funding to low-income individuals and families, allowing them to benefit from all the Y has to offer.

Registration is open. The cost for participants ages 10 & up who register by September 26 is $25. Participants under the age of 10 are free. Race day registration is available for $35. Participants who register by September 13 will receive a T-shirt. 

Day of race check-in and packet pick-up will be open from 7:30-8:45 a.m. and an awards ceremony will take place at approximately 9:45 a.m.

“Here at the Y, we are proud to turn no one away for an inability to pay,” said Trish Fisher, President & CEO, Greater Scranton YMCA. “Our financial assistance program helps children attend daycare and preschool, families join the Y, youth participate in swim lessons and programming and more. Church picnic

St. Eulalia’s Parish will host its annual Summer Festival on Friday, July 19, and Saturday, July 20, from 5-10 p.m., on the picnic grounds of its parish campus, 214 Blue Shutters Road in Roaring Brook Township. The summer festival also features the 14th Annual Jerry Mahon 5K Walk/Run on Saturday at 9 a.m. 

The festival includes an array of homemade ethnic foods, such as pizza fritta, potato pancakes, haluski, pierogi, porchetta, and sausage and peppers, as well as traditional picnic fare like wimpies, burgers, hot dogs, chicken tenders, and a beer pavilion. Features include the parish flea market, known as Grandma’s Attic; Tricky Tray basket raffles; a bake sale; and an arts & crafts boutique. New this year is a candy shop in the Parish Hall, known as “Sweet Taste of Heaven.” The festival also includes kids’ games, face painting, a Summer Cash Raffle, and small games of chance.

Entertainment begins on Friday, July 19, with the Electric City Steel Drum Project, performing from 6-7 p.m.,  followed by Alex Nebraski, known as “Alex the Crooner,” from 7-9 p.m. On Saturday, July 20, Between the Velvet Lies, a classic rock band, will perform from 7-10 p.m.

BEAT, the supergroup featuring Adrian Belew, Tony Levin, Steve Vai, and Danny Carey, will perform 80’s King Crimson songs at the F.M. Kirby Center on Wednesday, Dec. 4 at 8 p.m.

Marywood Open House

Marywood University will hold a summer undergraduate open house for high school students and their parents on Saturday, July 13, from 9 a.m.-2 p.m. Registration begins at 8:30 a.m. in the Fireplace Lounge at the Nazareth Student Center on the University’s campus, and the last campus tour departs at 1:45 p.m. A complementary continental breakfast and lunch are included in the event.

During the open house, prospective students can walk through the student services & organizations fair and find out how Marywood students fit in and have fun on campus. In addition, students will be able to explore various majors at an academic fair, learn more about the admissions process, visit an academic department of their choice and spend some time with faculty, as well as chat with varsity coaches and tour Marywood’s campus.
